No Bake Apricot & Nut Roll


When your kids get home from school super tired and you want to give them a quick, nutritious and energy-packed snack, these roll slices could be just the thing they need!

They contain no gluten, eggs or dairy, so they will be suitable for those with these food sensitivities as well.

Preparation time: 10 min for prep, 30 min to settle in the fridge or freezer

Ingredients for 1 roll:

  • 100 g of cashew nuts

  • 3 tablespoons of hazelnuts

  • 3 Brazil nuts

  • 2 tablespoons of chia seeds

  • 2 tablespoons of flax seeds

  • 5 dried apricots

  • 1 banana

  • 4 tablespoons of gluten free oats (you can also use regular oats, if you don’t need for the roll to be gluten-free)

  • 1 grated apple

  • 1 tablespoon of nut butter (almond or peanut butter work well)

How to make them:

Put all ingredients in a sturdy food processor and blend until you get a smooth mix.

Then use all the dough to make a roll, wrap it in the baking paper, a foil or a recyclable food wrap. Cool the roll in the fridge or put it in the freezer for 30 min before serving.
