VANILLA CHIA PUDDING

When you need a simple, protein-packed & a bit fancy looking snack for your children, this vanilla chia pudding comes to the rescue!

It has only a few ingredients, can be prepared in just a few minutes and a portion of it contains a ton of goodness, including all of your daily Omega 3, 33% of your average adult daily fibre requirements, 21% of magnesium and 18% of selenium.

Plus, it is gluten, dairy and egg free!

Preparation time: 5 min for the prep, 10-15 min for soaking

Ingredients for 3 portions:

  • 50g of chia seeds
  • 150ml of unsweetened almond milk
  • 1 banana
  • 3 apricots
  • 3 table spoons of mixed berries
  • 1/4 teaspoon of ground vanilla bean

How to make it:

Combine almond milk, chia seeds, sliced banana and vanilla and stir the mix with a fork. Let it stand for 10-15 min and during the time stir again once or twice.

Top the chia mix with cubed apricots and berries (or other fruit of your choice!) and serve.

You can keep this pudding in the fridge for about a day or two, but keep in mind that you might need to add some extra almond milk before serving it, to make sure it doesn't get too thick.
