Chocolate, Sweet Potato & Lentil Brownies

Honestly, we never thought that brownies made from sweet potato, lentils, oats and raw cocoa could taste that great!

Plus they gluten and dairy free AND low in sugar so it’s more than safe to dig into them as a part of a snack as well.

What you'll need for 1 tray of brownies:

  • 1 large sweet potato

  • 2 cups of green lentils

  • 1/4 cup of maple syrup

  • 1 teaspoon of cinnamon

  • 3 eggs

  • 1/3 cup of raw cocoa

  • 1 cup of gluten free oats (or you can also use regular oats, if you don’t mind the brownies containing gluten)

  • 2 tablespoons of chia seed

  • 2 tablespoons of flax seed

  • 1/3 cup of raisins

  • 1/3 teaspoon of ground vanilla

  • 1/2 teaspoon of bicarbonate soda

  • 4 tablespoons of olive oil

How to make them:

Soak lentils in water for a min of 1 hour and then cook them for 20 min.

Cook 1 large sweet potato (if you can, steam it, to retain as many nutrients as possible, or alternatively boil it).

In the meantime, soak flax and chia seeds in a 2/3 cup of water for about 15 min. Stir often.

In a large food processor combine cooked lentils, sweet potato, eggs, raw cocoa, bicarbonate soda, olive oil, oats, vanilla, cinnamon, raisins, soaked seeds and maple syrup. Mix until you get a smooth texture. If the mix is too dry, add some plant-based milk to make it softer (e.g. almond milk), or alternatively water.

Once you have a smooth mix, transfer it into a greased baking tray and bake it at 175 C for 20 minutes.

Cool down and serve.
