Almond & Parmesan Courgette Chips
This is one of our absolutely favourite healthy snacks (or party finger foods!). They are quick and simple to make, can be eaten warm or cold and are super delicious.
Plus, they are gluten and sugar free!
Preparation time: 10 min for prep, 15 min for baking
Ingredients for 1 tray:
4 large courgettes
2 eggs (ideally organic)
1 cup of grated Parmesan cheese
50 g of ground almonds
Salt and pepper to taste
Cooking oil (we used almond oil)
How to make them:
Trim the top and bottom off the courgettes and cut each courgette in half. Slice them again length-ways and then further into 1-2 cm thick pieces, so that they look like chips.
Whisk eggs, pepper and salt in one bowl (or on a plate), grate Parmesan cheese into a second bowl and prepare a third bowl with ground almonds. Grease a baking tray with some cooking oil.
Dip courgette fingers in beaten egg and then roll half of them in grated Parmesan and the other half in ground almonds.
Transfer them to the baking tray and bake at 175 C for 15-20 min, until courgettes are soft and crispy on the outside.
