Egg & Avo Quinoa Bowl
This is one of those meals that you can serve pretty much at any time during the day - for breakfast, lunch or even dinner.
It is super quick to make and will give you plenty of protein, healthy fats, B vitamins and minerals like magnesium and iron.
Preparation time: 5 min to prep, 15 min for cooking
Ingredients for 1 portion:
1/3 cup of raw quinoa
A handful of cherry tomatoes
1/2 cup of broccoli florets
Oil that is suitable for frying (we prefer almond oil)
How to make it:
Boil 1.5 cups of water and add in quinoa, halved cherry tomatoes, parsley and broccoli florets. Simmer for 12 min and remove from heat. Let it stand for 2 min so that quinoa can absorb some additional water.
In the meantime, heat up 1/2 teaspoon of oil in a frying pan and fry 1 egg until the whites are no longer liquid and the yolk is still soft.
Remove the remaining water from the pot with quinoa and transfer quinoa with vegetables into a serving bowl. Top with a fried egg, avocado slices and fresh parsley. Add salt and pepper to taste and serve.
