Apple Sauce & Berry Muffins

Not all muffins are made equal!

A good muffin doesn’t need to be bad for you and these particular ones are packed with protein, fibre, healthy fats and magnesium. Plus, they contain no added sugar which makes them a super nutritious and healthy snack on any day.

Preparation time: 40 min (30 for baking)

Ingredients for 10-12 muffins:

  • 100 g of ground almonds

  • 250 g of oats

  • 2 ripe bananas

  • 1 cup of apple sauce (or 2 cooked and mashed apples)

  • 1/4 cup of chia seeds

  • 2 handful of raisins

  • 1 cup of mixed frozen berries

  • 1/2 teaspoon of ground cloves

  • 1 1/2 teaspoon of cinnamon

  • 1/3 cup of unsweetened almond milk

  • water

How to make them:

Soak chia seeds in 1/2 cups of water and leave them stand for 10 min. Stir frequently.

In the meantime, mash bananas with a fork until you get a smooth texture. Add apple sauce, raisins, cinnamon, cloves and combine well. Stir in ground almonds and oats and add 1/2 cup of almond milk. If the mix is too dry, add more milk.

Finally, mix in most of the frozen berries and use a handful berries for topping the muffins before baking.

Bake at 175 C for 30 min. Remove from the oven and cool down before serving.
