OVERNIGHT COCONUT, BLUEBERRY & BANANA OATS



A super simple breakfast that can be prepared in 5 min in the evening and that your kids will love too.

Packed with protein, fibre, vitamin C, healthy fats and antioxidants to support your kids’ well-being!

Preparation time: 5 min

What you will need for 2 portions:

  • 1 large glass jar
  • 1 cup (250ml) of raw oats
  • 1-2 table spoons of chia seeds
  • 1 banana
  • 1 table spoon of raisins
  • 2 table spoons of blueberries (fresh or frozen)
  • 1/2 cup of canned coconut milk 
  • 1/2 cup of water
  • Cinnamon and ground vanilla to taste

How to make it: In a large glass jar combine oats and chia seeds, add raisins, blueberries and sliced banana and sprinkle with vanilla and cinnamon. In a separate bowl combine coconut milk and water, stir well and pour the mixture into the glass jar over the oats and fruit mix. Stir to combine all the ingredients. If you feel the overall mixture is too dry, add a bit more water.

Close the jar with a lid and store it in the fridge overnight. All you need to do in the morning is serve it and enjoy!

(Some of the other add-ins that go well with these oats if you want to experiment are flax seed, other types of berries, coconut flakes, cubed pears, chopped nuts, nutmeg or ground cloves, dried apricots and nut butters. If you find coconut milk too creamy, you can also replace it with unsweetened almond milk).
